Crackers
Used in suitable cracker formulations where a light structure, crisp bite and low final moisture are required.
Food Chemicals
A food-grade raising agent used mainly in thin, low-moisture baked products where the gases released during baking can escape effectively.
Product Overview
Ammonium bicarbonate, also known as ammonium hydrogen carbonate, is a food-grade raising agent. When heated, it breaks down and releases carbon dioxide, ammonia and water vapour, creating the gas needed to lighten suitable doughs during baking.
It is particularly useful in crackers, wafers and thin cookies that are baked to a low final moisture level. In these products, the released ammonia can escape before cooling, helping produce an open texture and a crisp finished product.
The process must allow ammonia to escape fully. Ammonium bicarbonate is generally unsuitable for thick or moist baked products because retained ammonia can affect odour and flavour.
Common Applications
Suitability depends on product thickness, baking conditions and final moisture. Each formulation should be validated before commercial production.
01
Used in suitable cracker formulations where a light structure, crisp bite and low final moisture are required.
02
Supports leavening in thin baked products that allow the released ammonia to leave during baking.
03
Considered for wafer systems and other dry, thin products where controlled gas release supports the required texture.
04
May be used in other compatible low-moisture baked products after process, flavour and residual-ammonia checks.

Product Questions
For purchasing decisions, always review the latest specification and regulatory requirements.
Ask About This ProductAmmonium bicarbonate, also called ammonium hydrogen carbonate, is a raising agent identified as INS 503(ii). It is commonly supplied as white crystals or crystalline powder.
During heating, it decomposes and releases carbon dioxide, ammonia and water vapour. These gases expand the dough and help develop the required texture.
It is generally not recommended for thick or moist products because ammonia may remain after baking and affect odour or flavour. Suitability should be confirmed through formulation and process trials.
